Owner of midcoast bakeries opens new Brunswick cafe

A new breakfast and lunch spot from the team behind a pair of midcoast bakeries has opened in the former Great Impasta building on Maine Street in Brunswick.

Baked on Maine officially opened on Friday, Jan. 2, after a soft opening earlier in the week. The menu offers many options for breakfast and sandwiches for lunch, as well as sweet and savory breakfast plates and baked goods from its sister bakeries — Wildflours Gluten-Free Bakery in Brunswick and Mae’s Cafe & Bakery in Bath.

Manager Ryan Ballard said the cafe offers something new.

“What’s not already here is a breakfast place on Maine Street in Brunswick,” he said. “Our menu is definitely going to be different than most every other place. I’m doing smoked meat, smoked brisket, pulled pork, and we’re doing that with breakfast and (lunch) sandwiches.”

Keeping with the tradition of Wildflours, a 100% gluten-free bakery, the menu items at Baked on Maine are offered gluten-free and with gluten, Ballard said.

Ned Horton, a Nashville real estate investor with roots in Brunswick, is the owner of the three sister cafes. Ballard said Horton and his team in Maine became interested in opening a space on Maine Street in Brunswick as soon as The Great Impasta went up for sale.

“We were trying to decide if we were going to move Wildflours over here, or if we were going to do something new and feature Wildflours and Mae’s, and we chose to feature the two because making (the cafe) just gluten-free would really limit the customer base,” Ballard said.

Ballard said the cafe has been busy so far during its first few days of operation.

Baked on Maine is currently open from Friday through Monday, 8 a.m. to 2 p.m., at 42 Maine St.
